Tom Kha Chicken

Today’s Thai recipe is Tom Kha Chicken (or in Thai, Tom Kha Gai).  Slices of tender chicken breast cooked in coconut milk, lemon grass, and galanga with mushroom and fresh lime juice.

Ingredients

  • 1/2 lb boneless skinless chicken
  • 1 package baby bella mushrooms
  • 15oz can :abalone-mushrooms:
  • 14oz can :coconut-milk:
  • 1 package :tom-ka-paste:
  • 1 lime
  • 2-3 :thai-chili:
  • 1 teaspoon :fish-sauce:
  • 1 teaspoon sugar

Cooking Directions

  1. Bring to a boil 1 cup coconut milk.
  2. Add paste and cut up chicken to pot. Cook 2 minutes.
  3. Add 2 cups water to pot, bring to a boil.
  4. Add mushrooms and remaining coconut milk.
  5. Add fish sauce, sugar.
  6. Add juice from lime and chilis to taste.

Bamboo Shoots, Coconut Milk, and Tom Kha Paste

For this dish we’ll need a can of abalone mushrooms, a can of coconut milk, and a package of Tom Kha paste.  If you can’t find these at your local grocery store, don’t worry you can always purchase them from Amazon.  They have abalone mushrooms, coconut milk, and the Tom Ka Paste.  With free shipping it’s sometimes easier ordering online then going to the store!

Add coconut milk cream to pot

Don’t shake the coconut milk can!  Open the can and spoon out the top half into a pot.  This will be the thicker cream that rises to the top.  Slowly bring the cream to a boil over medium/low heat.  While that’s happening you can start cutting up the chicken into small pieces.

Once the coconut cream has come to a boil add the chicken to the pot.

Add Tom Ka paste to pot

Add the paste to the pot also.  Here’s a little trick to make it easier to get the paste out of the package – put the package under some running warm/hot warm.  This will heat the paste up a little and make it slide out of the package much easier!

Stir till chicken is cooked

Keeping the heat at medium cook the chicken for a couple minutes, constantly stirring the mixture.

Add 2 cups water to pot

Next add two cups of water to the pot and bring it to a boil.

Add mushrooms to pot

Cut the mushrooms into edible pieces and once the soup starts boiling add them.  You can adjust the amount of mushrooms you add.  If you really like mushrooms add more in, or if you aren’t a big fan you don’t have to put many in.  The other is you can leave the chicken out and add more mushrooms to make the dish a vegetarian soup.

After the soup starts boiling again add the rest of the coconut milk.  All that’s left is to add in 1 teaspoon of fish sauce and 1 teaspoon of sugar.  The lime juice and chili you’ll want to add depending upon your taste.  If you want the soup to be more sour use the lime juice.  If you’d like the soup to be a little spicier, add some chilis.
